No voice!

Well, I officially have no voice this morning. Only a whisper barely comes out! Pretty frustrating!
Last night we went to a Taste of Home cooking school, it was alot of fun! Moriah won a cookbook and mom won a free bag of groceries! They were thrilled! It was my aunt June's birthday and mom's was last week so we had cake and ice cream afterwards. I went to the grocery store and did a marathon sweep through it! I think it took me 5 min at the most!
Well, I have been drinking honey lemon water all morning and trying to take it easy. I hope that it helps! It makes it hard to direct boys while there is no voice there!
I had quite the day to begin the day though! I woke up to hearing giggles and tickling contests and it just got better as the day went on. I made mom her cake and my oven was acting funny for some reason. It burnt pretty badly, so I had to start over again. While I was set the pan to soak, I needed something else in the sink and spilled dirty burnt crumb water all over the counter and everywhere! Second cake came out better and my cousing said it looked like a big chocolate chip cookie! (Mom always has chocolate chip chiffon cakes) I don't think I have made one since I was 18!
Anyhow, besides the sore throat and voice disapearing, I didn't really know who would watch the boys while I was at the cooking school. It ended up Fred watched Anthony (he slept most of the time) and Uncle Terry watched the other 3! He says we owe him for life! Thankfully they were really good, other than changing their mind over hot dogs and hamburgers while he was serving them!
Eric had a fever and earache and was so miserable. We tried all the stuff we had and we all prayed for him and it was so neat. He calmed down and was actually smiling for a bit! It was so neat to see the amazing difference!
I don't know how he is today, but I cannot call and find out as Moriah wouldn't be able to hear me.
Well, I need to attempt school! Paul is on a tickling rampage again. How do you stop that? But he is taking care of the baby!

Miss Delinquent!

I have been a bit deliquent in my writing here! I have a good excuse though. My dear friend Bobbi has come for a visit this past week and is here until Friday. I am dreading her leaving!
Life has been a flurry! We started school and the boys are doing good, but they have had boundless energy! This morning I woke up to yells as a tickling contest was going on first thing! We had to do a few laps outside to calm down to eat breakfast!
I listened to the testimony of Eli Stahl the other day. That was really good! It really encouraged me to bring God the little things in prayer. He was just so full of the love of God it was amazing! For those of you who do not know who that is, Eli Stahl was a one of the young people in a community of Hutterites in RoundUp, MT that were converted to the Lord some years back. It is a wonderful story!
Lee is having speech therapy 2 times a week, he is having a hard time forming words the right way and coming up with the right vocabulary! He speaks constantly, but not always in understandable! That gives me one more thing to do every week, I guess, but at least she comes out to the house. It makes me keep the house cleaner!
Well, I need to go get to daily duties! I will be back with more writing later!
Oh, on Friday we drove up to Libby and saw my mom's new house she bought for a birth center. She is almost completed her midwife certifcation in MT, so she is pretty excited!

Frugal recipes

I thought I would share a few of my favorite frugal recipes. I have a personal experience with being poorer than many people and might have the odd experience in enjoying learning how to eat well on nothing! <p> Beef Stew
1/2 -1 lb of beef (you can use any kind of beef, stew meat, round steak or whatever. I used 2 pieces of round steak last night. I paid about 3.15 for 4 of them so it was about $1.60 for the meat) chopped into small squares
2 potatoes, diced 1 carrot,
sliced 1 stalk celery, diced 1/2 green pepper,
diced 1 onion, diced flour salt pepper water
 1 T oil 1 t. beef bouillon Toss meat with flour.
Heat oil in pan and brown meat until light browned. Add 1 qt. water. Let simmer 1/2 hour Add diced vegetables and 2 c. water, beef bouillon, simmer for 1 hour or until beef is tender Serve with french bread (store bought is .98 or homemade is really cheap)
<p>Spanish rice
3 T. olive oil 1 medium onion chopped
1 clove garlic minced 1 green pepper chopped seeded
1 c. long grain rice 2 c. boiling water (which if you are using brown add extra)
2 t. chicken broth granules 2 T. tomato paste 1/2 t. cumin
Saute onion garlic and green pepper until limp in oil add rice and brown until lightly browned. mix rest of ingredients and add Cover and cook 20-25 min (longer for brown) Top with chicken breasts or pork chops if you want and bake until done. Or you can mix in cooked ground beef and serve with cornbread or tortillas and salad
<p>
 Enchiladas
corn tortillas or flour tortillas whichever you prefer
meat- cooked chicken, beef or pork
 cheese
enchilada sauce (I get one little can of enchilada sauce for .69 and make a large pan of it using this recipe below) You can fill the tortillas with whatever you want, but I usually use leftover meat and some cheese and roll them up, placing in a pan with a bit of sauce on the bottom. Fill pan then top with more sauce. Top with grated cheese. Bake until warm and bubbly at 350 or in the microwave on lower power setting for about 10 min.
<p> You can serve the rice recipe above without the meat in it for a side dish. <p>
Black Bean Chili
6 chicken breast tenders 2 15 oz. cans black beans undrained (or homecooked ones)
2 cans of diced or stewed tomatoes 1 c. salsa mild or Medium
14 1/2 oz. can tomato sauce 2 t. chili powder 1/2 t. cumin
1/4 t. garlic powder tortilla chips 2 c. grated cheddar cheese
Sour cream
Combine all ingredients in crock pot/slow cooker except chips and cheese. Cover, cook on low 8 hours. Just before serving, remove chicken breasts and and slice into bite size pieces. Stir into soup. To serve: put handful of chips in bottom of bowl, ladle soup over chips, top with cheese and sour cream. It was really good! You could use more or less chicken if you want. You could also skip the chips, but my boys love this with chips even though they don’t like tomatoes much so I use less of those because of them, I also used less salsa I think and it was mild. <p>
These are a few of my favorites! You have to remember when you look a frugal recipe though on the area you are shopping in and the amount of people you are feeding. It may be a cheap recipe when feeding 2, but very expensive to feed 6.

Borcht

Here is the recipe for Borcht! Everyone makes it a bit different, but this is how I do it. I will write about my trip later and post a few pictures.
Start with a pot according to the amount you want to make.
I usually make about 2 gallons so I'll tell you that size.
You can boil a bone to get broth or add cooked meat and bouillon or you can
make it meatless.
Fill pan 1/3 full of cubed potatoes about 1 1/2 in. cubes fill with water
or broth. add salt to taste Simmer until Potatoes are soft, Add 1/2 head
cabbage very finely sliced. Meanwhile in a frying pan brown 1 diced onion
in 1 T. oil, add 1 grated carrot when onion is yellow, fry a little add 1
grated fresh beet or about 5 small canned beets grated. Fry a while. Add 1
small (8 oz.) can tomato sauce. and one or 2 cans water. Simmer about 5 min.
Add to large pot. Simmer about 15 min. Add a bay leaf and 2t. dillweed
Serve with sour cream on top.
Hope this understandable!
Some people also put a little rinsed sauerkraut in instead some of the
cabbage.

Back to normal?

I managed to make it back home in one piece, but barely! I think I have had enough of flying for awhile! I feel so tired and have not stopped moving all day! Fred surprised me by building the shelves in my office I needed, so I worked all day getting part of it put together and am far from done, but at least the boys room is partially pulled together! There is too much stuff in this house though so I am in a get rid of mood! Everywhere I look there is more stuff to go through and messes to clean! Hopefully when it is all done we will have amuch easier time of it. I am sort of a time limit as school starts for us on Monday.
Well, I am tired so good night for now!
